Expect hand-rolled cavatelli in a vibrant ‘aglio e olio’ sauce, Vargetto’s signature red snapper with potato scales, and towers of sfinci di San Giuseppe on the roaming dessert cart, best washed down with ice-cold pitchers of Sicily’s answer to Sangria.
